Ricetta: clafoutis al kiwi (o come volete!) – { Recipe: (your choice)fruit clafoutis }

Vi ripropongo una ricettina che avevo postato tempo fa sull’altro bloggino… il clafoutis!

E’ un dolce buonissimo di origine francese la cui ricetta originale prevede l’utilizzo di ciliegie nere, rigorosamente con il nocciolo… se preparato con altra frutta si dovrebbe chiamare “flognard”, ma “clafoutis” è decisamente più figo Smile

Esistono molte varianti con diversi tipi di frutta (pere, mele, pesche, uva, melone, lamponi, albicocche…), o con aggiunta di frutta secca o di cannella; esistono anche varianti salate in cui al posto dello zucchero si mette formaggio grattugiato ed al posto della frutta verdura cotta (funghi, spinaci, bietole, cavolfiori,ortiche…)

Un'ulteriore variante è di utilizzare, al posto della farina pane raffermo senza crosta bagnato di latte o succo di frutta… in pratica il clafoutis è un modo elegante di riciclare avanzi, che male non fa!

Ecco a voi la mia versione:

Ingredienti:

  • 4 kiwi
  • 100 gr. di zucchero semolato
  • 50 gr. di farina
  • 250 ml. latte
  • una bustina di vanillina
  • un pizzico di sale
  • zucchero agiguntivo per la copertura

Procedimento:

  • Il clafoutis è un dolce dell'ultimo momento, velocissimo da preparare e da cuocere quindi accendete subito il forno a 200°C ed imburrate uno stampo ( essendo il clafoutis un dolce da servire senza doverlo sformare, scegliete uno stampo che sia carino da portare in tavola )
  • Mentre il forno si scalda, mettete in una ciotola la farina e lo zucchero e mescolate
  • Aggiungete le uova ed amalgamate il tutto con l'ausilio di una frusta
  • Quando avrete ottenuto un composto liscio aggiungete il pizzico di sale, la bustina di vanillina ed il latte ed amalgamate nuovamente il tutto sempre con la frusta
  • Sbucciate e tagliate I kiwi in quarti e disponeteli nello stampo precedentemente imburrato
  • Versateci sopra la pastella che avete preparato
  • Infornate per 35 minuti
  • Dopo 35 minuti spolverate il clafoutis con abbondante zucchero e rimettete in forno con il grill acceso per altri 5 minuti, per caramellare lo zucchero in superficie
  • Portate il dolce in tavola ancora nello stampo dove è stato cotto e lasciate che ciascun commensale possa servirsi direttamente dallo stampo

There are many variations with different types of fruit (pears, apples, peaches, grapes, melon, raspberries, apricots ...), or with the addiction of nuts or dried cinnamon; there are also salted variations in which instead of sugar you put Parmigiano and instead of fruit you use cooked vegetables (mushrooms, spinach, beets, cauliflower, nettles ...)

Another variation is to use, instead of flour, bread without crust soaked in milk or fruit juice ... basically the clafoutis is a nice way to recycle leftovers, it will not hurts!

Here it is my version:

Ingredients: 

  • 4 kiwi
  • 100 gr. granulated sugar
  • 50 gr. flour
  • 250 ml. milk
  • a teaspoon of vanilla extract
  • a pinch of salt
  • sugar for covering

Method:

  • The clafoutis is a sweet last minute, quick to prepare and cook: immediately turn the oven to 200 ° C and buttered mold (being the clafoutis a dessert to be served in its cooking mold, choose a cute mold!)
  • While the oven heats, place in a bowl the flour and sugar and stir
  • Add eggs and mix well together with the aid of a whip
  • When you obtain a smooth, add a pinch of salt, a teaspoon of vanilla extract and milk and mix again all the while with a whisk
  • Peel and cut kiwi into quarters and place in the mold previously buttered
  • Cover them with the prepared smooth and put in the oven
  • Bake for 35 minutes
  • After 35 minutes sprinkle the clafoutis with plenty of sugar and put in the oven with the grill to caramelize the sugar on the surface
  • Bring the cake on the table still in the mold where it was cooked and let each diner can take it directly from the mold
  • Buon Appetito Smile
